This is a hard, crumbly cheese with a high level of solubility. Piave DOP Vecchio Riserva ripens for over 18 months and is characterised by a remarkable harmony of organoleptic characteristics and a high level of persistency on the palate. The nose has a satisfying bouquet without being invasive, which scents ranging from spices to dried fruit, with complex toasted notes. These sensations are also confirmed on the palate and are enriched by vegetal hints. Despite the long ripening period, the flavour is sweet and savoury with a light, elegantly spicy note that gives conveys surprising balance to the cheese.
